Resep Sop tulang Iga Sapi ( Indonesian Beef Ribs Soup Recipe)

Resep Sop Iga Sapi
bahan - bahan :
1/2 kg tulang iga sapi
3 buah wortel
3 buah kentang
4 batang daun batang
3 batang seledri
1/2 sdt bubuk pala
1/2 sdt lada putih bubuk
3 buah cengkeh
1 cm kayu manis
1 sdm penyedap rasa sapi
bawang goreng untuk taburan

garam dan gula secukupnya

bumbu halus:
4 bawang putih
5 siung bawang merah

Cara membuatnya:
1. cuci, kupas dan potong2 sayurannya, lalu sisihkan.
2. didihkan air masak sampe medidih lalu masukan tulang iganya dan masak sampai lunak dan empuk, sesekali saring bagian atasnya , saring kotoran dan lemak2 yang mengapung di bagian atas.
3. sambil menunggu tulang iganya masak, kita haluskan bumbu halusnya lalu tumis hingga berwarna coklat dan harum lalu tuang ke air sop dan aduk2 sampe merata dan masukan kayu manis, cengkeh, bubuk pala, garam, gula dan taburi dengan bawang goreng, lalu aduk2 dan tutup dan biarkan masak sampe lunak
4. setelah daging iganya lunak dan empuk lalu kita masukan sayurannya, kita tuang sayuran yang keras dulu yach lalu tutup dan biarkan sampe masak. lalu setelah sayuran masak, lalu masukan potongan tomat, masukan irisan daun bawang, daun selederi, dan taburi dengan extra bawang goreng dan cicipi, kurang apa? manis? asin dan tambahi kekurangannya lalu matikan api dan sajikan
sajikan sop tulang iga sapi bersama nasi hangat dan taburan bawang goreng

Indonesian Style Beef Ribs Soup
Ingredients:
1/2 kg beef ribs
3 carrots
3 potatoes
4 spring onion
3 celery
1/2 Tablespoon nutmeg ground
1/2 Tablespoon white pepper powder
3 cloves
1 cm cinnamon
1 tablespoon beef seasoning powder
fried shallot as needed
salt and sugar as needed(adjust to your taste) 

spices to be grinded:
1. wash, peel and cut the vegetables, set aside
2. in a large pot, fill with enough water, bring to boil then add in beef ribs and cook until the meat tender and easy to fall off the bones. Let it boil while skimming off the fats from the surface.
3. while we waiting for the beef ribs, lets grind the spices, you can use food processor, blender or you can use pestle mortar, grind garlic and shallots till smooth then fry the paste to release all the intense flavor, then pour in the fried paste into the soup, mix it well, then add in cinnamon, cloves, ground nutmeg, salt, sugar,  and sprinkle with fried shallots, mix it together then cover it and let it cook the meat until tender
4. after the ribs tender, add in the hard vegetables first , add in potatoes,, carrots, celery, mix it all together and close it and let the veggies cooked, after cooked, add in tomato slices, spring onion slices and then sprinkle some extra fried shallots, mix it well and taste it, add more sugar or more salt if needed, adjust according to your taste, then turn off the stove and serve.
serve beef ribs soup with white rice and sprinkle with extra fried shallots
